I am fond of hash and love an egg with it. It never occurred to me to do it in the dish this way. I like the idea of chicken. Just lovely.

This looks wonderful. I'm going to give it a try. Hope you had fun in NYC!

I'll definitely have to check out the cookbook. I'm not a fan of sweet potatoes so I really enjoyed your suggested substitutions in this. It looks really good!

I had a dish just like this at a diner in NYC. I've been looking for a recipe ever since! Although at the diner I asked for gravy and it took them 20 minutes to find some - turns out they had to go to the basement to find a can. Anyway, thanks for the recipe!

I tried this this morning, and it was incredibly tasty. I took out the peppers and cayenne because I don't like them, but it was really yummy nonetheless. I did have a slight problem making the sweet potato crispy... Do you have any suggestions? I don't know what I did wrong.

Great recipe. It was awesome. I'm glad I found your site. :)

I love Sara Foster and could live happily ever after eating all her food.

I ,too, love the Foster Market Cookbook. Your recipes and variations sound delicious.

As soon as it cools down to below 90 (in January), this would be perfect for dinner!

The only meat I could really ever eat for breakfast has always been bacon...I love chicken, but I'm not sure I could do chicken for breakfast...I would love this recipe for dinner though! I do love sweet potato anything.
