    This really does sound awesome! I believe a salad a day keeps a doctor away. Unless I’m rushed or pressed for time, I will always include one salad during lunch and one at dinner time.A salad is fresh and it’s the perfect way in my opinion to end my meals.

    Have had this recipe posted on my fridge for a week with the ingredients in the house and ready to go. After having to scrub my original dinner plans for the other night, I reluctantly served fish sticks to my 2 and 4 year old kids as well as my husband and myself for dinner. A last minute effort to get dinner on the table pronto, left me wanting something gown-up, and "good for you". So after the kids went to bed, I chopped the squash, put it in the oven, and while it roasted, prepared the rest of the ingredients. Thirty minutes or so later, my husband and I enjoyed a WONDERFUL, very yummy dinner -- just the two of us. PERFECT end to a busy day.... Thank you for another great recipe!

    Haha... I so know what you mean with bodypump! I've done it for years and absolutely loved it... Hmm, reading your story makes me want to go back. I'm right now into spinning, which I totally love too, but for variation, maybe adding bodypump back in might be a good idea. Those sore muscles afterwards really make you feel like you've done something good and healthy! Love your recipe too!!

    This looks like a light and healthy salad. I've noticed that a lot of people are using chickpeas in recipes lately, which is good because they're full of protein. My favorite salad using chickpeas is a can of drained chickpeas, thinly sliced hothouse cuke, salt, pepper and a viniagrette of rice wine vinegar and olive oil. It's so refreshing and delicious!

    Oh man, I know those exercise classes well. There was one in Chapel Hill I used to attend called "Boot Camp," and you are so right. Those bars are NOT light after about 5 minutes of the class. Good for you for switching things up and getting those muscles nice and sore. This salad looks like a perfect, delicious, and nutritious way to reenergize after a great workout. Can't wait to try this one!

    This looks and sounds SO good and I have everything to make it--well, except for the goat cheese. To which I have a question--I actually don't like goat cheese. I've tried and just don't really like it. Just wondering if you have another cheese suggestion--as long as it's not any of the "moldy" cheeses, I don't like those either. I'm not trying to sound picky, just wondering what you think. Or should I just leave cheese off?
